These champagne Jell-O shots are light, bubbly, and sophisticated, perfect for New Year’s Eve parties. They strike a balance between playful and polished, using a gentle method to preserve the champagne’s fizz for a silky, melt-away texture.

Ingredients

Scale
  • 1 ½ cups champagne or sparkling wine (brut or extra dry)
  • 1 cup cranberry juice cocktail (unsweetened preferred)
  • ¼ cup fresh lemon juice (about 2 lemons)
  • 3 tablespoons granulated sugar (adjust to taste)
  • 3 packets unflavored gelatin (Knox brand, each about 2 ¼ teaspoons)
  • ½ cup cold water
  • Optional: edible glitter or gold leaf flakes
  • Optional: fresh raspberries or pomegranate arils

Instructions

  1. Bloom the gelatin: Pour ½ cup cold water into a small bowl. Sprinkle 3 packets of gelatin evenly over the surface. Let sit for 5 to 10 minutes until firm and jiggly.
  2. Heat the juice mixture: In a small saucepan, combine cranberry juice, lemon juice, and sugar. Warm over medium heat, stirring occasionally, until sugar dissolves (140°F to 150°F). Do not boil.
  3. Dissolve the bloomed gelatin: Remove juice mixture from heat. Add bloomed gelatin and whisk gently until completely dissolved (2 to 3 minutes). Strain if needed.
  4. Cool the mixture: Let the gelatin-juice mixture cool for about 10 minutes at room temperature until warm but not hot.
  5. Add the champagne: Slowly pour champagne down the side of the measuring cup to preserve carbonation. Stir gently 3 to 4 times.
  6. Fill the shot cups: Place shot cups on a baking sheet. Pour mixture into each cup, filling ¾ full. Add optional fruit now.
  7. Refrigerate: Transfer baking sheet to refrigerator. Let set for at least 4 hours, preferably overnight.
  8. Add sparkle (optional): Just before serving, sprinkle edible glitter over each shot.

Notes

Let champagne sit open for 10 minutes before using to settle bubbles. Do not skip blooming gelatin. For non-alcoholic version, use non-alcoholic sparkling wine and add extra half packet of gelatin. Shots can be made up to 5 days ahead; best within 3 days.
