Ingredients

Scale
  • Large wooden cutting board or serving platter (at least 16×12 inches)
  • 3–4 large fresh rosemary sprigs
  • Small handful fresh thyme sprigs
  • 8 ounces thinly sliced Genoa salami
  • 4 ounces thinly sliced prosciutto
  • 4 ounces thinly sliced pepperoni
  • 6 ounces sharp cheddar cheese, cut into small cubes or triangles
  • 4 ounces Gouda or Edam cheese, cut into small wedges
  • 4 ounces goat cheese log, sliced into rounds or crumbled
  • 1/2 cup pitted green olives (stuffed with pimento or garlic)
  • 1 cup red grapes, washed and halved
  • 1/2 cup cherry tomatoes, halved
  • Small handful fresh basil leaves
  • 1 cup assorted crackers or crostini (gluten-free if needed)
  • 1/4 cup dried cranberries or pomegranate arils
  • 1/2 cup marinated artichoke hearts, drained (optional)
  • 1/4 cup roasted red peppers, sliced (optional)
  • 1/4 cup almonds or walnuts (optional)
  • Honey or balsamic glaze for drizzling (optional)

Instructions

  1. Place your cutting board or platter on a flat surface in landscape orientation. Wipe clean and dry.
  2. Create the tree trunk: Lay 2-3 large rosemary sprigs at the bottom center of the board, pointing upward.
  3. Build the base layer of meats: Starting about 4 inches above the rosemary trunk, arrange salami slices in a rough triangle shape, overlapping slightly. Make the base wider (10-12 inches across) and taper to a point at the top. Use about half the salami.
  4. Add the cheese layer: Scatter cheddar cubes and gouda wedges evenly over the meat base, pressing in gently. Leave some gaps.
  5. Layer the remaining meats: Fold prosciutto slices into loose ribbons and tuck into gaps. Place pepperoni slices flat, overlapping slightly, to create a solid tree shape.
  6. Add the goat cheese: Slice goat cheese log into 1/2-inch rounds and arrange in a line down the center of the tree like a spine.
  7. Decorate with ornaments: Scatter red grapes, cherry tomatoes, dried cranberries, and pomegranate arils over the tree, spacing them like ornaments.
  8. Add green garnishes: Tuck small thyme sprigs and basil leaves into gaps around meats and cheeses to fill bare spots.
  9. Fill in with olives and extras: Place green olives in small clusters around the base. Add artichoke hearts or roasted red peppers if using.
  10. Arrange crackers: Place crackers or crostini around the base of the tree, fanning them out slightly to create a gift effect.
  11. Add finishing touches: Drizzle honey or balsamic glaze over goat cheese if desired. Gently press the board to nestle everything together.
  12. Serve immediately or refrigerate. If prepping ahead, cover loosely with plastic wrap and refrigerate. Remove 20 minutes before serving to bring cheeses to room temperature.

Notes

For best results, add fresh fruit and herbs right before serving to prevent sogginess. The board can be prepped ahead by slicing cheeses and washing grapes the day before; assemble 20 minutes before serving. Leftovers can be stored separately in airtight containers for 3-4 days. The tree shape doesn’t need to be perfect—a slightly imperfect tree looks more natural.
