Best Easy Apple Cider Mimosa with Cinnamon Sugar Rim

A quick and easy fall cocktail made with apple cider and dry champagne, finished with a cinnamon sugar rim. Perfect for brunch, Friendsgiving, or any gathering where you want to impress without stress.

  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon honey or maple syrup
  • 4 ounces apple cider (chilled)
  • 4 ounces champagne, prosecco, or sparkling wine (chilled, dry brut preferred)
  • Ice cubes (optional)
  • Optional garnish: 1 thin apple slice or a cinnamon stick

Instructions

  1. Prepare the cinnamon sugar mixture: In a small shallow dish, combine 2 tablespoons granulated sugar and 1 teaspoon ground cinnamon. Stir until evenly mixed.
  2. Prepare the rim: Pour 1 tablespoon honey or maple syrup into another small shallow dish. If honey is too thick, microwave for 10 seconds. Dip the rim of a champagne flute into the honey, rotating gently to coat. Let excess drip off.
  3. Apply the cinnamon sugar: Immediately dip the honey-coated rim into the cinnamon sugar mixture, rotating gently. Tap the glass lightly to remove loose sugar. Place upright. Repeat for all glasses. Do not stack rimmed glasses.
  4. Add the apple cider: Fill each rimmed glass halfway with chilled apple cider (about 4 ounces).
  5. Top with champagne: Slowly pour 4 ounces of chilled champagne into each glass, pouring down the side to preserve bubbles.
  6. Garnish (optional): Add a thin apple slice to the rim or drop a cinnamon stick into the glass.
  7. Serve immediately.

Notes

Use a dry brut champagne for best balance. Chill all ingredients and glasses beforehand. The cinnamon sugar rim can be prepped up to 24 hours in advance; store rimmed glasses upright covered with plastic wrap. For a non-alcoholic version, substitute sparkling apple cider or ginger ale.
