  • 2 cups sharp cheddar cheese, freshly shredded
  • 1/2 cup beer (lager or pale ale)
  • 6 strips bacon, cooked until crispy and crumbled
  • 1/2 cup sour cream (full-fat)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh chives (optional)
  • 1 bag pretzels (soft pretzel bites, pretzel sticks, or pretzel chips)
  • Optional: sliced apples, celery sticks, or crusty bread for dipping

Instructions

  1. Cook the bacon. Place the bacon strips in a cold skillet and turn the heat to medium. Cook for 6-8 minutes, flipping once, until crispy. Transfer to a paper towel-lined plate to drain. Once cool enough to handle, crumble into small pieces. Reserve 1 tablespoon of the bacon fat in the skillet and set aside.
  2. Start the cheese base. In a medium saucepan over medium-low heat, add the reserved bacon fat. Let it warm for about 30 seconds, then add the cream cheese. Stir constantly with a wooden spoon until the cream cheese is completely softened and smooth—about 2 minutes.
  3. Add the beer. Pour in the beer slowly while stirring. The mixture might look a little separated at first—that’s normal. Keep stirring gently for about 1 minute until it comes together into a creamy, slightly bubbly sauce.
  4. Incorporate the cheddar. Reduce the heat to low. Add the shredded cheddar cheese in handfuls, stirring each addition until it’s fully melted before adding the next. The whole process takes about 3-4 minutes. The dip should be thick and glossy at this point.
  5. Finish with sour cream and seasonings. Remove the saucepan from the heat. Stir in the sour cream, garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper. Taste and adjust seasoning.
  6. Fold in the bacon and chives. Reserve about 1 tablespoon of crumbled bacon for garnish. Gently fold the remaining bacon and half the chives into the dip. Don’t overmix.
  7. Serve immediately. Transfer the dip to a serving bowl. Top with the reserved bacon and remaining chives. Serve warm with pretzels, apple slices, or whatever you’re dipping.

Don’t rush the cheese melting; low heat is key. Shred your own cheese for smooth melting. Let cream cheese soften to room temperature. If the dip separates, whisk in a tablespoon of cold cream cheese or heavy cream. For a baked version, transfer to an oven-safe dish, top with extra cheddar, and bake at 375°F for 10-12 minutes.
