Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners.
  2. Make the cream cheese filling: In a medium bowl, beat softened cream cheese with ¼ cup sugar, egg yolk, and ½ teaspoon vanilla extract until smooth. Set aside.
  3. Mix dry ingredients: In a large bowl, whisk together flour, 1 cup sugar, baking soda, baking powder, pumpkin pie spice, cinnamon, and salt.
  4. Mix wet ingredients: In a separate bowl, whisk together eggs, pumpkin puree, vegetable oil, milk, and 1 teaspoon vanilla extract until well combined.
  5. Combine wet and dry: Pour wet mixture into dry mixture and stir with a wooden spoon until just combined. Do not overmix; a few lumps are fine.
  6. Fill muffin cups: Divide batter evenly among the 12 muffin cups, filling each about ¾ full.
