  • 3 pounds sweet potatoes (about 4 medium-large), peeled and cubed
  • 3 tablespoons unsalted butter, softened
  • 3 tablespoons pure maple syrup
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ¼ cup unsweetened almond milk (or any milk you prefer)
  • 1 cup pecans, roughly chopped
  • ½ cup all-purpose flour (use oat flour for gluten-free)
  • ¼ cup old-fashioned rolled oats
  • ¼ cup coconut sugar (or light brown sugar)
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 4 tablespoons cold unsalted butter, cut into small cubes

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter or cooking spray.
  2. Place the peeled and cubed sweet potatoes in a large pot and cover with cold water. Add a generous pinch of salt. Bring to a boil over high heat, then reduce to a simmer. Cook for 15-20 minutes, until fork-tender. Drain well in a colander and let steam dry for a minute.
  3. Return the drained sweet potatoes to the pot or transfer to a large mixing bowl. Mash with a potato masher until smooth (or leave a few lumps for texture). Let cool for about 5 minutes.
  4. To the mashed sweet potatoes, add the softened butter, maple syrup, eggs, vanilla, cinnamon, nutmeg, salt, and almond milk. Stir until well combined and smooth.
  5. Pour the sweet potato mixture into the prepared baking dish and spread into an even layer. Set aside.
  6. In a medium bowl, combine the chopped pecans, flour, oats, coconut sugar, cinnamon, and salt. Stir with a fork. Add the cold cubed butter. Use a pastry cutter or two forks to cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces. Do not overmix.
  7. Sprinkle the streusel evenly over the sweet potato filling. Do not press it down.
  8. Bake for 25-30 minutes, until the filling is hot and bubbly around the edges and the streusel is golden brown. If the streusel browns too quickly, tent loosely with foil for the last 10 minutes.
  9. Remove from the oven and let rest for 5-10 minutes before serving.

Notes

For best results, toast the pecans lightly before using. Keep the streusel butter cold for a crunchy topping. If making ahead, prepare filling and streusel separately and assemble just before baking. The casserole tastes even better the next day.
