Scale
  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • 4 slices bacon, cooked and crumbled
  • 1 tablespoon fresh chives, chopped

Instructions

  1. Place eggs in a single layer in a saucepan and cover with cold water by 1 inch. Bring to a boil over high heat, then cover, remove from heat, and let stand for 12 minutes.
  2. Drain eggs and transfer to a bowl of ice water to cool completely. Peel eggs and cut in half lengthwise.
  3. Remove yolks and place in a medium bowl. Mash yolks with a fork.
  4. Add mayonnaise, Dijon mustard, white vinegar, salt, pepper, and smoked paprika to the yolks. Mix until smooth and creamy.
  5. Spoon or pipe the yolk mixture into the egg white halves.
  6. Top with crumbled bacon and chopped chives. Sprinkle with additional smoked paprika if desired.
  7. Refrigerate for at least 30 minutes before serving.

Notes

For extra smooth filling, use a food processor or blender. Cook bacon until very crispy for best texture. Can be made a day ahead and stored in the refrigerator.
