  • 2 tablespoons (32g) creamy peanut butter
  • 1 cup (240ml) milk (any kind)
  • 1 tablespoon (15ml) maple syrup
  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon (2.5ml) vanilla extract
  • Pinch of salt
  • For topping (optional): sliced banana, extra peanut butter, granola, dark chocolate chips

Instructions

  1. In a small bowl, mash the ripe banana with a fork until mostly smooth.
  2. In a jar or separate bowl, whisk together the mashed banana, peanut butter, milk, maple syrup, and vanilla extract until well combined.
  3. Add the rolled oats, chia seeds, and a pinch of salt to the jar. Stir until everything is evenly mixed.
  4. Seal the jar tightly and refrigerate for at least 4 hours, preferably overnight (8-12 hours).
  5. The next morning, stir the oats. If too thick, add a splash of milk to loosen.
  6. Add desired toppings and serve cold or at room temperature.

Notes

Use very ripe bananas for natural sweetness. Do not microwave; serve cold or at room temperature. Flavors develop after a day in the fridge. For a warm version, microwave 30-45 seconds but texture will be softer.
