This crockpot turkey breast with herb butter is incredibly juicy, easy to prepare, and perfect for any occasion. With simple ingredients and a set-it-and-forget-it method, you’ll get tender, flavorful turkey that makes your kitchen smell like Thanksgiving.

Ingredients

Scale
  • 1 bone-in, skin-on turkey breast (5–7 pounds)
  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon fresh sage, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 cup chicken broth or turkey stock
  • 1 medium onion, quartered (optional)
  • 2–3 sprigs fresh rosemary and thyme for garnish

Instructions

  1. Pat the turkey breast dry with paper towels.
  2. In a small bowl, combine softened butter, minced garlic, chopped rosemary, thyme, sage, salt, pepper, and paprika. Mash together with a fork until evenly mixed.
  3. Gently slide your fingers under the turkey skin to create a pocket between the skin and the meat without tearing the skin.
  4. Use about two-thirds of the herb butter and spread it directly onto the meat under the skin. Spread the remaining butter all over the outside of the skin.
  5. Pour chicken broth into the bottom of the slow cooker. Add quartered onion if using. Place the turkey breast in the crockpot, breast side up.
  6. Cover and cook on LOW for 4-6 hours, or until internal temperature reaches 165°F (74°C) at the thickest part of the breast.
  7. When turkey reaches 165°F, carefully transfer to a cutting board using tongs. Tent loosely with aluminum foil and let rest for 15-20 minutes.
  8. While turkey rests, pour cooking liquid through a fine-mesh strainer into a measuring cup. Skim off fat and save juices for gravy or to spoon over sliced meat.
  9. Slice turkey against the grain into thick slices. Arrange on a platter, drizzle with reserved cooking juices, and garnish with fresh herb sprigs.

Notes

Don’t lift the lid during cooking unless necessary. Use a meat thermometer for accuracy. For golden-brown skin, broil for 2-3 minutes after resting. Let turkey rest before slicing to retain juices.
