Ingredients

  • Brie or Camembert (8 oz / 225 g)
  • Aged Cheddar (6 oz / 170 g)
  • Goat Cheese Log (4 oz / 115 g)
  • Manchego or Gruyère (6 oz / 170 g)
  • Prosciutto (4 oz / 115 g)
  • Salami (4 oz / 115 g)
  • Capicola or Speck (3 oz / 85 g) (optional)
  • Fresh Rosemary (4-5 large sprigs)
  • Crackers (about 8 oz / 225 g)
  • Red grapes (1 cup / 150 g)
  • Sliced apples or pears (1 cup / 150 g)
  • Dried figs or apricots (½ cup / 75 g)
  • Toasted almonds or pecans (½ cup / 60 g)
  • Olives (½ cup / 75 g)
  • Honey or Fig Jam
  • Dried Cranberries or Cherries (¼ cup / 40 g)
  • Cornichons or Pickled Onions (¼ cup / 40 g)

Instructions

  1. Prep the Rosemary Trees: Rinse rosemary sprigs gently and pat dry. Trim the bottom stem to about 1 inch (2.5 cm) flat. Set aside.
  2. Arrange the Cheeses: Place cheeses on the board, spacing them out. Leave brie whole, slice cheddar into thin slices or cubes, slice goat cheese into rounds, and cut Manchego into thin wedges.
  3. Insert the Rosemary Trees: Press trimmed rosemary stems into the top of the brie and other cheeses, pushing about ½ inch (1 cm) deep. Trim if too tall.
  4. Add the Meats: Fold or roll prosciutto into loose ribbons, fold salami slices in half twice, and drape capicola. Place in clusters around the board.
  5. Fill in with Accompaniments: Place small bowls of honey, jam, olives, and nuts in gaps. Scatter grapes, sliced apples, dried cranberries, and cornichons around the board.
  6. Add the Crackers: Arrange crackers in small stacks or fans near the cheeses.
  7. Final Garnish: Tuck extra rosemary sprigs around the edges. Sprinkle almonds or dried cranberries on top. Drizzle honey over brie or goat cheese just before serving.
  8. Serve Immediately or Refrigerate: Serve within an hour at room temperature, or cover and refrigerate for up to 4 hours. Remove from fridge 20 minutes before serving.

Notes

Fresh rosemary is essential for the tree effect. Trim stems at an angle for easier insertion into soft cheese. Let soft cheeses come to room temperature before adding rosemary to prevent cracking. Prep the board (without rosemary trees) up to 6 hours ahead and refrigerate; add trees just before serving.
