These no-bake white chocolate avalanche cookies are a happy accident turned into a spring favorite. They combine creamy white chocolate, crispy rice cereal, dried cranberries, and toasted almonds for a perfect crunchy-truffle texture that’s quick, easy, and utterly delicious.

Ingredients

Scale
  • 12 ounces (about 2 cups) white chocolate chips (preferably Ghirardelli or Guittard)
  • 3 cups crispy rice cereal (e.g., Kellogg’s Rice Krispies)
  • 1/2 cup dried cranberries or cherries
  • 1/2 cup toasted slivered almonds
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • Pinch of flaky sea salt (for sprinkling)
  • Optional: 1/4 cup shredded coconut (toasted or raw), 2 tablespoons freeze-dried strawberries, 1/4 cup mini white chocolate chips

Instructions

  1. Line a baking sheet with parchment paper or a silicone mat. Set aside.
  2. Place the white chocolate chips and coconut oil in a large microwave-safe bowl. Microwave in 30-second bursts, stirring well after each, until completely smooth (about 1.5 to 2 minutes total).
  3. Stir in the vanilla extract until fully combined.
  4. Let the mixture cool for 2-3 minutes until warm but not hot (bathwater temperature).
  5. Gently fold in the crispy rice cereal, dried cranberries, and toasted almonds using a rubber spatula until everything is evenly coated.
  6. Scoop the mixture onto the prepared baking sheet using a 1.5-tablespoon cookie scoop or two spoons, leaving a little space between each cookie.
  7. Immediately sprinkle a tiny pinch of flaky sea salt on top of each cookie while the chocolate is still tacky.
  8. Refrigerate for at least 30 minutes until the cookies are firm (or freeze for 15 minutes if in a hurry).
  9. Transfer to an airtight container and store in the refrigerator until ready to serve.

Notes

For best results, use fresh white chocolate chips and avoid overheating. If the mixture seems too thick, add another teaspoon of coconut oil; if too thin, add a tablespoon more cereal. Work quickly once cereal is added as the mixture sets fast. Cookies can be stored in the refrigerator for up to two weeks or frozen for up to three months. For a softer texture, let sit at room temperature for 5 minutes before serving.
