  • 1/3 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour, spooned and leveled
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup chopped walnuts, plus extra for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan with butter or cooking spray, or line it with parchment paper.
  2. In your large mixing bowl, mash the bananas with a fork until mostly smooth.
  3. Add the melted butter and stir until combined.
  4. Mix in the sugar, egg, and vanilla until smooth and well combined.
  5. Sprinkle the flour, baking soda, salt, and cinnamon (if using) on top. Stir gently until just combined.
  6. Fold in the chopped walnuts until evenly distributed. Reserve a handful for topping if desired.
  7. Pour the batter into the prepared pan and spread evenly. Sprinkle reserved walnuts on top if using.
  8. Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil if browning too quickly.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, use very ripe bananas with black spots. Toast walnuts lightly before adding for deeper flavor. Let batter rest in pan for 10 minutes before baking for a domed top. Store at room temperature for up to 4 days or freeze for up to 3 months.
