A make-ahead cinnamon roll casserole with a custard base that transforms refrigerated cinnamon rolls into a gooey, bread-pudding-like breakfast. Perfect for a stress-free Christmas morning.

Ingredients

Scale
  • 2 cans (12.4 oz each) refrigerated cinnamon rolls with icing
  • 4 large eggs, room temperature
  • 1/2 cup heavy cream
  • 1/2 cup whole milk
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/4 cup packed brown sugar
  • 1 teaspoon cinnamon
  • Reserved icing from cinnamon roll cans

Instructions

  1. Grease a 9×13-inch baking dish with non-stick cooking spray or butter.
  2. Open both cans of cinnamon rolls and set the icing packets aside. Cut each roll into quarters.
  3. Scatter the quartered cinnamon roll pieces evenly in the greased baking dish.
  4. In a large mixing bowl, whisk together eggs, heavy cream, whole milk, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined and sugar is mostly dissolved.
  5. Slowly pour the custard mixture evenly over the cinnamon roll pieces. Gently press down any pieces sticking up above the liquid.
  6. In a small microwave-safe bowl, melt the butter. Stir in brown sugar and cinnamon to form a thick paste. Drop spoonfuls over the casserole and spread gently.
  7. Cover the dish tightly with plastic wrap or aluminum foil and refrigerate for at least 6 hours or overnight (up to 24 hours).
  8. When ready to bake, preheat oven to 350°F (175°C). Remove casserole from fridge and let sit for 15 minutes.
  9. Bake uncovered for 30-35 minutes, until top is golden brown and center is set but slightly jiggly. A knife inserted in center should come out mostly clean.
  10. Let casserole cool for 5 minutes. Microwave reserved icing packets for 10-15 seconds to thin, then drizzle over the top.
  11. Serve warm, scooping portions with a spatula to include caramelized edges and gooey middle pieces.

Notes

The overnight soak is essential for the best texture. Let the casserole sit out for 15 minutes before baking to ensure even cooking. If the top browns too quickly, tent with foil for the last 10 minutes. Leftovers keep in the refrigerator for up to 3 days and reheat well in the microwave for 20-30 seconds.
