Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set it aside.
  2. Reduce the apple cider: Pour the 1/2 cup of apple cider into a small saucepan and bring it to a simmer over medium heat. Let it cook for about 6-8 minutes, stirring occasionally, until it reduces to about 2 tablespoons. Remove from heat and let cool for a few minutes.
  3. Cream the butter and sugars: In a medium mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Beat with a hand mixer or stir vigorously with a wooden spoon for about 2 minutes until light and fluffy.
  4. Add the wet ingredients: Mix in the egg yolk, vanilla extract, and the cooled reduced apple cider. Stir until well combined.
  5. Mix the dry ingredients: In a small bowl, whisk together the flour, cinnamon, nutmeg, baking soda, and salt.
  6. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
  7. Make the cinnamon sugar coating: In a small bowl, mix together the 2 tablespoons of sugar and 1/2 teaspoon of cinnamon.
  8. Shape the cookies: Using a cookie scoop or tablespoon, scoop out rounded balls of dough (about 1.5 tablespoons each). You should get exactly 6 cookies. Roll each ball between your palms to make it smooth, then roll it in the cinnamon sugar mixture until fully coated. Place on the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake: Bake for 10-12 minutes, or until the edges are golden brown and the centers look slightly puffed and set.
  10. Cool: Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire cooling rack to cool completely.
