  • 1/8 teaspoon black pepper (freshly ground preferred)
  • 1/4 teaspoon smoked paprika (plus extra for garnish)
  • Fresh chives or parsley (optional, for garnish)

Instructions

  1. Hard-Boil the Eggs: Place 12 eggs in a single layer in a saucepan. Cover with cold water by about 1 inch. Bring to a full rolling boil over high heat (8-10 minutes). Turn off heat, cover, and let sit for exactly 12 minutes. Meanwhile, prepare a large bowl of ice water. Transfer eggs immediately to ice water bath and let sit for at least 5 minutes.
  2. Cook the Bacon: Place 6 slices bacon in a cold skillet. Turn heat to medium and cook, flipping occasionally, until deep golden brown and crispy (8-10 minutes). Transfer to a paper-towel-lined plate to drain and cool. Once cool, chop into pea-sized pieces. Reserve about 2 tablespoons for topping.
  3. Peel and Halve the Eggs: Gently tap each egg on the counter to crack the shell all over, then peel under running cold water. Pat dry with paper towels. Slice each egg in half lengthwise. Pop yolks into a mixing bowl. Arrange white halves on a serving platter, cut side up.
  4. Make the Filling: Add 1/3 cup mayonnaise, 1 teaspoon yellow mustard, 1/2 teaspoon white vinegar, 1/4 teaspoon salt, 1/8 teaspoon black pepper, and 1/4 teaspoon smoked paprika to the bowl with yolks. Mash together with a fork until completely smooth (about 2 minutes). Fold in most of the chopped bacon, reserving 2 tablespoons for garnish. Taste and adjust seasoning.
  5. Fill the Eggs: Spoon filling into a piping bag or zip-top bag. If using a zip-top bag, snip about 1/2 inch off one corner. Pipe filling into each egg white half, mounding slightly. Should fill all 24 halves.
  6. Garnish and Serve: Sprinkle reserved bacon bits over filled eggs. Dust lightly with extra smoked paprika. Garnish with fresh chives or parsley if desired. Serve immediately or refrigerate for up to 4 hours. If making ahead, add bacon and paprika just before serving.

Notes

For perfect hard-boiled eggs, use eggs that are at least a week old for easier peeling. Add a teaspoon of baking soda to the boiling water to help loosen shells. Don’t overmix the filling to avoid a gummy texture. For make-ahead, boil and peel eggs up to 2 days ahead, make filling up to 1 day ahead, and assemble a few hours before serving.
