These candied maple brown butter sweet potatoes are a quick and easy holiday side dish that combines tender sweet potatoes with nutty brown butter and sweet maple syrup. Perfect for last-minute hosting or impressing guests without stress.

Ingredients

Scale
  • 3 pounds sweet potatoes (about 4–5 medium), peeled and cut into 1-inch cubes
  • 1/2 cup unsalted butter
  • 1/3 cup pure maple syrup
  • 1/4 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1 tablespoon maple syrup (for drizzling, optional)
  • Flaky sea salt (for sprinkling, optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Position a rack in the middle of the oven. Line a large baking sheet with parchment paper or aluminum foil.
  2. Peel and cube the sweet potatoes into 1-inch cubes. Place them in a large mixing bowl.
  3. In a medium saucepan over medium heat, melt 1/2 cup unsalted butter. Stir constantly until the butter foams, bubbles, and turns golden with brown specks and a nutty aroma (about 5-7 minutes). Remove from heat immediately and pour into a heat-safe bowl.
  4. To the browned butter, add 1/3 cup pure maple syrup, 1/4 cup packed light brown sugar, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1 teaspoon vanilla extract. Whisk until smooth.
  5. Pour the maple brown butter mixture over the cubed sweet potatoes and toss until evenly coated.
  6. Spread the coated sweet potatoes in a single layer on the prepared baking sheet. Do not overcrowd.
  7. Roast for 25-30 minutes, flipping halfway through, until the sweet potatoes are fork-tender and the edges are caramelized and slightly crispy.
  8. If using nuts, sprinkle 1/2 cup chopped pecans or walnuts over the potatoes during the last 5 minutes of roasting.
  9. Remove from the oven and let rest for 5 minutes. Transfer to a serving dish, drizzle with an extra tablespoon of maple syrup, and sprinkle with flaky sea salt if desired. Serve warm.

Notes

Don’t rush the brown butter; it can go from perfect to burnt in seconds. Cut sweet potatoes evenly for uniform cooking. Do not overcrowd the pan to ensure caramelization. For extra caramelization, broil for 1-2 minutes at the end. Make ahead: prep sweet potatoes and brown butter mixture separately a day ahead.
