Crispy, salty, and perfectly roasted pumpkin seeds made in the air fryer in under 15 minutes. This simple recipe delivers a cozy, crunchy snack that tastes like autumn.

Ingredients

Scale
  • 1 cup fresh pumpkin seeds, cleaned and patted dry
  • 1 teaspoon olive oil
  • ½ teaspoon sea salt (or to taste)
  • ¼ teaspoon garlic powder (optional)
  • ¼ teaspoon smoked paprika (optional)
  • ⅛ teaspoon cayenne pepper (optional)

Instructions

  1. Clean the seeds: Separate seeds from pumpkin guts, rinse in a colander under cold water, and remove any stringy bits.
  2. Dry the seeds thoroughly: Spread rinsed seeds on a clean kitchen towel or paper towels and pat dry. Let sit for 5-10 minutes if still damp.
  3. Preheat air fryer to 350°F (175°C) for 3 minutes.
  4. Toss dried seeds with olive oil and sea salt in a mixing bowl until evenly coated. Add optional seasonings if desired.
  5. Spread seeds in a single layer in the air fryer basket. Cook in batches if needed.
  6. Cook at 350°F for 10 minutes, shaking or stirring halfway through at the 5-minute mark.
  7. Check for doneness: Seeds should be golden brown and fragrant. If not crispy, cook for 1-2 more minutes, watching closely.
  8. Transfer seeds to a plate or bowl and let cool for 5 minutes before serving.

Notes

Do not skip drying the seeds—wet seeds will steam instead of roast. Watch the timing closely as air fryers vary; start checking at 8 minutes. For stronger flavor, sprinkle extra salt or seasoning on warm seeds after cooking. Store in an airtight container at room temperature for up to a week; re-crisp in air fryer at 350°F for 2-3 minutes if needed.
