Cozy Apple Cider Donuts with Easy Maple Glaze

These baked apple cider donuts are tender, spiced, and topped with a rich maple glaze. A happy accident turned into the perfect fall treat, ready in under 30 minutes.

  • 1 cup apple cider (unfiltered is best)
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ cup granulated sugar
  • ¼ cup light brown sugar, packed
  • 2 large eggs, room temperature
  • ⅓ cup unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • ⅓ cup buttermilk, room temperature
  • 1 cup powdered sugar, sifted
  • 3 tablespoons pure maple syrup
  • 1 tablespoon unsalted butter, melted
  • 12 tablespoons milk or heavy cream
  • Pinch of salt

Instructions

  1. Reduce the apple cider: Pour 1 cup apple cider into a medium saucepan and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer for 10-12 minutes, stirring occasionally, until reduced to about ¼ cup. Remove from heat and let cool for 5 minutes.
  2. Preheat oven to 350°F (175°C). Grease a donut pan thoroughly with butter or nonstick spray.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. In a medium bowl, whisk together granulated sugar, brown sugar, and eggs until smooth and slightly pale, about 1 minute. Add melted butter, vanilla extract, and cooled reduced apple cider; whisk until combined. Add buttermilk and whisk gently.
  5. Pour wet ingredients into dry ingredients. Fold with a rubber spatula just until no streaks of flour remain. Do not overmix.
  6. Transfer batter to a piping bag or zip-top bag with a ½-inch corner snipped off. Pipe batter into each donut cavity, filling about ⅔ to ¾ full.
  7. Bake for 10-12 minutes, until golden brown around edges and a toothpick inserted into the thickest part comes out clean. Cool in pan for 3 minutes, then transfer to a wire rack to cool completely.
  8. Make the maple glaze: In a small bowl, whisk together powdered sugar, maple syrup, melted butter, and salt. Add 1 tablespoon milk or cream and whisk until smooth. Adjust consistency with additional milk or powdered sugar as needed.
  9. Once donuts are completely cool, dip the top of each into the glaze. Let excess drip off, then place back on wire rack, glazed side up. Let set for 15-20 minutes.

Notes

Do not skip the cider reduction—it concentrates the apple flavor. Use room temperature ingredients for best results. Grease the pan generously to prevent sticking. Glaze only when donuts are completely cool.
