  • 1/2 cup apple brandy or bourbon (optional)

  • 2 apples (thinly sliced)
  • 4 cinnamon sticks
  • Fresh rosemary sprigs (optional)
  • 1/4 cup dried apple chips
  • 1/4 cup pomegranate seeds
  • Additional caramel sauce for drizzling
  • Ground cinnamon and nutmeg for dusting
  • Honey or maple syrup (for sweetness adjustment)

Instructions

  1. Prepare the caramel rim: Pour the caramel sauce into a shallow bowl. In a separate shallow bowl, mix the granulated sugar with ground cinnamon. Dip each glass rim into the caramel sauce, letting the excess drip off for a few seconds. Then dip the wet rim into the cinnamon sugar mixture, rotating gently to coat evenly. Set the glasses aside to let the rim set for about 5 minutes.
  2. Chill everything: Make sure your apple cider and sparkling wine are thoroughly chilled. Warm cider will make the bubbles go flat instantly.
  3. Slice the garnishes: Thinly slice your apples into rounds or half-moons. Cut the orange slices into thin wheels. Break the cinnamon sticks in half if they’re long. Arrange everything on a platter or in small bowls.
  4. Mix the base: In your pitcher or dispenser, combine the chilled apple cider and sparkling wine. If you’re using apple brandy or bourbon, add it now. Stir gently with a long spoon to combine without losing all the bubbles.
  5. Set up the bar: Arrange your glasses with the caramel rims, the pitcher of base mixture, and all your garnishes in small bowls. Place the extra caramel sauce, honey, and ground spices in small dishes with spoons.
  6. Assemble and serve: Fill each glass about two-thirds full with the cider mixture. Let guests add their own garnishes: a few apple slices, a cinnamon stick, a rosemary sprig, and a drizzle of caramel or honey.

Notes

The caramel rim is non-negotiable for best flavor. Chill everything 24 hours ahead for optimal bubbles. Don’t overfill glasses to avoid sticky overflow. The base mixture can be made up to 24 hours ahead and stored in the refrigerator.
