Ingredients

Scale
  • 12 cups popped popcorn (about 1/2 cup unpopped kernels)
  • 16 ounces white chocolate melting wafers (about 3 cups)
  • 1 cup candy eyeballs (about 150 pieces)
  • 1/4 cup Halloween sprinkles (orange, black, purple jimmies or nonpareils)
  • 1 cup pretzel sticks, broken into 1-inch pieces
  • 1/2 cup dried cranberries (optional)
  • Pinch of flaky sea salt (optional)
  • 1 teaspoon coconut oil (only if using white chocolate chips)

Instructions

  1. Pop the popcorn using an air popper or microwave. You need about 12 cups of popped popcorn. Remove any unpopped kernels. Spread the popcorn on a large baking sheet and let it cool completely.
  2. While the popcorn cools, break pretzel sticks into 1-inch pieces. Measure out candy eyeballs, sprinkles, and dried cranberries (if using). Have everything ready in small bowls.
  3. Place white chocolate melting wafers in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each interval, until smooth and melted (about 2-3 intervals). If using white chocolate chips, add 1 teaspoon of coconut oil before melting.
  4. Pour the melted white chocolate over the cooled popcorn in a large mixing bowl. Use a silicone spatula to gently fold the popcorn until every kernel is coated.
  5. Add the broken pretzel pieces and dried cranberries (if using). Fold gently. Then add the candy eyeballs and Halloween sprinkles. Fold just until evenly distributed.
  6. Immediately spread the coated popcorn mixture onto a parchment-lined baking sheet in an even layer. Press down slightly with the spatula to form clusters. Sprinkle with flaky sea salt if desired.
  7. Let the popcorn set at room temperature for about 30 minutes, until the white chocolate is firm to the touch.
  8. Once set, break the popcorn into bite-sized clusters. Serve at room temperature.

Notes

Work quickly once the chocolate is melted as white chocolate thickens as it cools. Do not refrigerate to set as rapid cooling can cause the white chocolate to bloom. Store in an airtight container at room temperature for up to one week. For best results, let the coated popcorn sit for about 2 minutes before adding candy eyeballs to prevent the chocolate from melting the candy.
