Ingredients

Scale
  • 1 pound (450g) boneless, skinless chicken thighs
  • 8 ounces (225g) wide egg noodles
  • 8 cups (1.9 liters) low-sodium chicken broth
  • 3 medium carrots, peeled and diced
  • 3 stalks celery, diced
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • ¼ cup (15g) fresh dill, chopped
  • 1 large lemon, juiced and zested
  • 2 tablespoons (30ml) extra-virgin olive oil
  • 2 bay leaves
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • Optional garnish: extra fresh dill and lemon wedges

Instructions

  1. Sauté the vegetables: Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery. Cook for 6-8 minutes, stirring occasionally, until softened and the onion is translucent. Add the minced garlic and cook for 1 more minute until fragrant.
  2. Add the broth and chicken: Pour in 8 cups of chicken broth, scraping the bottom of the pot to release any browned bits. Add the bay leaves, 1 teaspoon of salt, and ½ teaspoon of black pepper. Nestle the chicken thighs into the broth. Bring to a gentle boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the chicken is cooked through (internal temperature of 165°F/74°C).
  3. Remove and shred the chicken: Using tongs, transfer the cooked chicken to a cutting board. Let rest for a few minutes, then use two forks to shred into bite-sized pieces.
  4. Cook the noodles: Bring the broth back to a gentle boil. Add the egg noodles and cook according to package directions (usually 6-8 minutes) until tender but still slightly firm. Stir occasionally to prevent sticking.
  5. Add the lemon and dill: Reduce heat to low. Stir in the shredded chicken, lemon zest, and 3 tablespoons of fresh lemon juice. Add the chopped fresh dill. Taste and adjust seasoning. Remove and discard the bay leaves.
  6. Let it rest: Turn off the heat and let the soup sit for 5 minutes before serving to allow flavors to meld.
  7. Serve: Ladle into bowls and garnish with extra fresh dill and a lemon wedge if desired. Serve hot with crusty bread or crackers.

Notes

Don’t overcook the noodles—cook them al dente as they’ll continue softening in the hot broth. Add lemon juice at the end to preserve its brightness. Use fresh dill for the best flavor; dried dill won’t give the same vibrant taste. For meal prep, cook noodles separately and add when serving. The soup can be refrigerated for up to 4 days or frozen for up to 3 months (freeze without noodles for best results).
