Ingredients

Scale
  • 12–16 sprigs fresh rosemary
  • 1 large round wooden board or platter (12–16 inches in diameter)
  • 8 oz (225g) sharp cheddar cheese, sliced into thin wedges
  • 8 oz (225g) brie or camembert, left whole or halved
  • 6 oz (170g) aged gouda or manchego, cut into small cubes
  • 4 oz (115g) goat cheese log, sliced into rounds
  • 6 oz (170g) prosciutto, thinly sliced
  • 6 oz (170g) salami (Genoa or soppressata), sliced thin
  • 4 oz (115g) capicola or coppa, thinly sliced (optional)
  • 1 cup (150g) mixed olives (kalamata and castelvetrano)
  • 1/2 cup (80g) dried cranberries or cherries
  • 1/2 cup (70g) roasted salted almonds or pecans
  • 1/4 cup (60ml) honey or fig jam
  • 1 cup fresh figs or grapes (if in season)
  • 3–4 cups small crackers or crostini

Instructions

  1. Prep Your Board and Rosemary (5 minutes): Lay your wooden board on a flat surface. Arrange fresh rosemary sprigs in a circle around the outer edge, stems pointing toward the center and leafy ends outward. Overlap slightly to form a continuous ring. Trim any long stems with kitchen shears.
  2. Place the Cheeses (5 minutes): Work inside the rosemary ring. Place brie or camembert at the 12 o’clock position. Arrange cheddar wedges around the circle, spacing evenly and fanning them out. Add goat cheese rounds between cheddar wedges. Scatter gouda or manchego cubes in empty spaces, ensuring cheese is at every ‘hour’ of the clock.
  3. Add the Meats (5 minutes): Fold prosciutto slices into loose ribbons or rosettes by folding in half lengthwise, rolling loosely, and standing on edge. Place rosettes around the wreath, tucking between cheese pieces. Fold salami slices in half, then in half again to create small triangles. Arrange in clusters near prosciutto. If using capicola, fold into loose ribbons and scatter around.
  4. Fill in with Accompaniments (5 minutes): Place small bowls of olives, honey or jam, and dried cranberries in the center or at strategic points around the circle. Scatter almonds or pecans in spaces between meats and cheeses. Tuck fresh figs or grapes into any remaining gaps. Aim for a dense, abundant look with no bare spots.
  5. Add the Crackers and Final Touches (2 minutes): Arrange crackers or crostini in small clusters around the outer edge of the board, just inside the rosemary ring. Drizzle honey over brie or goat cheese if desired. Step back and adjust any uneven pieces. Add extra rosemary sprigs on top for height if desired.
  6. Serve Immediately or Refrigerate: Best served at room temperature. If made ahead, let sit out for 20 minutes before serving. If refrigerating, cover loosely with plastic wrap and remove 30 minutes before guests arrive.

Notes

For best presentation, choose cheeses that contrast in color and texture. Mist rosemary sprigs lightly with water if making ahead to prevent wilting. Assemble no more than 2 hours before serving. If you don’t have a round board, use a large dinner plate or pizza pan covered with a cloth napkin. Leftovers can be stored separately in airtight containers: cheese for 3-5 days, meats for 2-3 days, fruit for 1-2 days. Rosemary can be rinsed, dried, and stored in a plastic bag in the fridge for up to a week.
