Ingredients

Scale
  • 1 cup (240 ml) strong brewed coffee or espresso
  • 1 cup (240 ml) whole milk
  • 2 tablespoons (30 ml) heavy cream
  • 2 tablespoons (15 grams) unsweetened cocoa powder
  • 2 tablespoons (25 grams) granulated sugar
  • 1/4 teaspoon (1 ml) peppermint extract
  • 1 pinch salt (about 1/16 teaspoon)
  • Whipped cream, for topping
  • Crushed candy cane or peppermint pieces, for garnish
  • Chocolate syrup, for drizzling

Instructions

  1. Brew 1 cup (240 ml) of strong coffee or pull a double shot of espresso. Set aside.
  2. In a small bowl, whisk together 2 tablespoons (15 grams) unsweetened cocoa powder, 2 tablespoons (25 grams) granulated sugar, and a tiny pinch of salt. Add about 2 tablespoons (30 ml) of hot water and whisk until smooth and glossy to form a cocoa paste.
  3. In a small saucepan over medium heat, combine 1 cup (240 ml) whole milk and 2 tablespoons (30 ml) heavy cream. Whisk occasionally until steaming but not boiling, about 3 to 4 minutes.
  4. Pour the cocoa paste into the warm milk mixture and whisk until fully incorporated and smooth. Remove from heat and stir in 1/4 teaspoon (1 ml) peppermint extract. Adjust to taste.
  5. Drizzle chocolate syrup around the inside of a large mug. Pour the brewed coffee or espresso into the mug, then pour the peppermint chocolate milk mixture over it. Stir gently to combine.
  6. Top with a generous dollop of whipped cream. Drizzle with more chocolate syrup and sprinkle crushed candy cane pieces over everything. Serve immediately.

Notes

Don’t boil the milk; heat until steaming with small bubbles around the edges. Always make a cocoa paste first to avoid lumps. Adjust peppermint extract to taste, starting with 1/4 teaspoon. Warm the mug with hot water before assembling to keep the drink hot longer. For best results, use homemade whipped cream.
