Ingredients

Scale
  • 1 ½ cups (190g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • ½ cup (113g) unsalted butter, cold and cubed
  • ¼ teaspoon salt
  • 2 cups (200g) fresh or frozen cranberries
  • ½ cup (100g) granulated sugar
  • ¼ cup (60ml) water
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 teaspoon vanilla extract
  • Zest of 1 orange (optional but recommended)
  • ½ cup (85g) white chocolate chips or chopped white chocolate
  • 1 teaspoon coconut oil or vegetable oil
  • ¼ cup dried cranberries, roughly chopped (optional)
  • Zest of ½ orange (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two opposite sides.
  2. Make the shortbread crust: In a medium bowl, whisk together flour, sugar, and salt. Add cold, cubed butter. Use a pastry cutter or fingertips to work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized butter bits. Press the mixture firmly and evenly into the prepared pan. Bake for 15-18 minutes until edges are lightly golden. Set aside to cool slightly.
  3. Cook the cranberry filling: In a medium saucepan, combine cranberries, sugar, and water. Cook over medium heat, stirring occasionally, until cranberries start to pop and soften, about 5-7 minutes.
  4. Thicken the filling: Whisk cornstarch and water together until smooth. Pour into the cranberry mixture, stirring constantly. Cook for 1-2 minutes until thickened like jam. Remove from heat and stir in vanilla extract and orange zest (if using). Let cool for 5 minutes.
  5. Assemble the bars: Pour the cranberry filling over the pre-baked crust and spread evenly. Bake for 18-22 minutes until filling is set and bubbly around the edges. The center should be slightly jiggly but not liquid.
  6. Cool completely: Let bars cool in the pan on a wire rack for at least 1 hour, then refrigerate for 1-2 hours until fully set.
  7. Make the white chocolate drizzle: In a small microwave-safe bowl, melt white chocolate chips and oil together in 20-second bursts, stirring between each, until smooth.
  8. Drizzle and garnish: Use a fork or spoon to drizzle melted white chocolate over chilled bars. Sprinkle with chopped dried cranberries and orange zest (if using). Let chocolate set for 15 minutes at room temperature or 5 minutes in the fridge.
  9. Cut and serve: Use parchment overhang to lift bars out of the pan. Place on a cutting board and cut into 16 squares with a sharp knife, wiping the blade clean between cuts.

Notes

Don’t skip the chilling step—bars need to be fully set before cutting. Watch white chocolate carefully to prevent seizing. For clean cuts, chill thoroughly and wipe knife between cuts. Bars can be made ahead and taste even better the next day.
