These Cranberry Bliss Blondies are the perfect cozy dessert—chewy, buttery bars with tart dried cranberries and a white chocolate drizzle. Quick to make with simple ingredients, they’re a crowd-pleaser for any occasion.

Ingredients

Scale
  • ½ cup (1 stick or 113g) unsalted butter, melted
  • 1 cup (200g) light brown sugar, packed
  • ¼ cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 egg yolk, room temperature
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • 1 cup + 2 tablespoons (140g) all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ¾ cup (90g) dried cranberries
  • ½ cup (90g) white chocolate chips or chopped white chocolate (for batter)
  • ¼ cup (45g) white chocolate chips or chopped white chocolate (for drizzle)
  • Optional: flaky sea salt for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving 2 inches of overhang on two opposite sides. Lightly spray with non-stick spray.
  2. In a medium bowl, whisk together melted butter (cooled slightly), light brown sugar, and granulated sugar until smooth and well combined.
  3. Add whole egg, egg yolk, vanilla extract, and almond extract. Whisk vigorously for about 30 seconds until pale, thick, and glossy.
  4. In a small bowl, whisk together all-purpose flour, salt, and baking powder.
  5. Pour dry ingredients into wet ingredients. Fold gently with a rubber spatula until just combined—do not overmix.
  6. Add dried cranberries and ½ cup white chocolate chips. Fold in with a few strokes until evenly distributed.
  7. Scrape batter into prepared pan and spread into an even layer. Bake for 22-26 minutes, until edges are golden brown and center is puffed and set. A toothpick inserted in center should come out with moist crumbs, not clean.
  8. Place pan on a cooling rack and let blondies cool completely in the pan.
  9. Once cool, use parchment overhang to lift blondies out onto a cutting board.
  10. In a small microwave-safe bowl, microwave remaining ¼ cup white chocolate chips in 20-second intervals, stirring between each, until smooth. Drizzle over cooled blondies using a fork or small spoon. Let set for about 20 minutes.
  11. Slice into 16 squares using a sharp chef’s knife, wiping blade clean between cuts.

Notes

Let melted butter cool for at least 5 minutes before adding eggs to avoid cooking them. Do not overmix once flour is added. For best results, bake the day before serving and add white chocolate drizzle on the day of serving. Blondies taste even better on day two.
