A festive and sophisticated cocktail that combines tart cranberry, earthy rosemary, and crisp prosecco. This easy-to-make drink is perfect for holiday gatherings and is sure to impress guests.

Ingredients

Scale
  • 2 tablespoons (30 ml) rosemary simple syrup
  • 1/4 cup (60 ml) unsweetened cranberry juice (100% juice)
  • Prosecco, chilled (dry, Brut style)
  • Fresh cranberries, for garnish
  • Fresh rosemary sprigs, for garnish
  • Ice cubes (optional)
  • For the rosemary simple syrup (if making from scratch):
  • 1 cup granulated sugar
  • 1 cup water
  • 3–4 large fresh rosemary sprigs

Instructions

  1. Make the rosemary simple syrup (if using homemade): Combine 1 cup sugar and 1 cup water in a small saucepan. Bring to a simmer over medium heat, stirring occasionally until the sugar dissolves completely. Add 3-4 fresh rosemary sprigs, reduce the heat to low, and let it simmer for 5 minutes. Remove from heat and let it steep for 10-15 minutes. Strain through a fine-mesh strainer into a glass jar and let it cool completely.
  2. Chill everything: Make sure your prosecco, cranberry juice, and glasses are all well-chilled. Pop your flutes in the freezer for about 10 minutes before starting.
  3. Mix the base: In a glass measuring cup or small pitcher, combine 2 tablespoons (30 ml) of rosemary simple syrup with 1/4 cup (60 ml) of cranberry juice. Stir gently until well combined.
  4. Pour the prosecco: Fill your chilled flute about halfway with prosecco. Pour slowly to avoid overflow, tilting the glass slightly and pouring down the side.
  5. Add the base: Slowly pour the cranberry-rosemary mixture into the prosecco. It will sink to the bottom and create a beautiful gradient effect.
  6. Garnish: Gently drop a few fresh cranberries into the glass. Take a fresh rosemary sprig and gently slap it between your palms to release the oils, then place it in the glass. Give it a gentle swirl to mix the layers before drinking.
  7. Serve immediately: This cocktail is best enjoyed within 5-10 minutes of making it. Make one glass at a time for the best experience.

Notes

Don’t skip slapping the rosemary sprig to release its oils. Use dry (Brut) prosecco to balance the sweetness. The rosemary simple syrup can be made ahead and stored in the fridge for up to two weeks. For a non-alcoholic version, substitute sparkling water or non-alcoholic sparkling wine.
