A bright, crunchy salad with tart cranberries, toasted walnuts, creamy feta, and a zesty maple-citrus dressing. Perfect for Thanksgiving or a quick weeknight side dish.

  • 6 cups mixed salad greens (150g)
  • 1 cup fresh cranberries (100g)
  • 1 cup walnuts (120g), toasted
  • 4 oz feta cheese (115g), crumbled
  • 1/2 medium red onion, thinly sliced
  • 1/2 cup dried cranberries (60g)
  • 1/4 cup extra virgin olive oil (60ml)
  • 2 tablespoons apple cider vinegar (30ml)
  • 1 tablespoon pure maple syrup (15ml)
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Toast the walnuts: Heat a small skillet over medium heat. Add walnuts and cook, stirring frequently, for 3-4 minutes until fragrant and lightly golden. Transfer to a plate to cool.
  2. Prepare the cranberries: Rinse fresh cranberries and pat dry. If using frozen, thaw and pat dry.
  3. Slice the red onion: Cut onion in half through the root, then thinly slice crosswise into half-moons. For a milder flavor, soak slices in cold water for 10 minutes, then drain and pat dry.
  4. Make the dressing: In a small jar or bowl, combine olive oil, apple cider vinegar, maple syrup, Dijon mustard, and a pinch of salt and pepper. Shake or whisk until emulsified. Taste and adjust seasoning.
  5. Assemble the salad: In a large salad bowl, combine mixed greens, toasted walnuts, fresh cranberries, dried cranberries, and sliced red onion. Drizzle about half the dressing over the top and toss gently. Add more dressing as needed.
  6. Add the feta: Sprinkle crumbled feta over the salad. Toss gently or leave on top for presentation. Serve immediately.

Notes

Toast walnuts just before using for best flavor. Dress salad right before serving to prevent wilting. For a main course, add shredded rotisserie chicken or roasted chickpeas. Dressing keeps up to 1 week in the fridge.
