A hearty and flavorful taco soup made in the slow cooker with ground beef, beans, corn, and a secret ingredient—ranch seasoning. This easy dump-and-go meal is perfect for busy weeknights and delivers creamy, savory comfort in every bowl.

  • 1 lb ground beef (80/20 works great)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 14.5 oz canned diced tomatoes, undrained (fire-roasted recommended)
  • 8 oz canned tomato sauce
  • 15 oz canned black beans, drained and rinsed
  • 15 oz canned pinto beans, drained and rinsed
  • 15 oz canned corn, drained (or frozen corn)
  • 2 cups beef broth (low-sodium)
  • 1 packet taco seasoning (or 3 tablespoons homemade)
  • 1 packet ranch seasoning (or 3 tablespoons homemade)
  • Optional toppings: shredded cheddar, sour cream, fresh cilantro, diced avocado, crushed tortilla chips, lime wedges

Instructions

  1. Brown the beef: Heat a large skillet over medium-high heat. Add ground beef and diced onion. Cook, breaking meat into crumbles, until beef is no longer pink (6-8 minutes). Onions should be translucent. Drain excess fat, then stir in minced garlic and cook 1 minute until fragrant.
  2. Transfer to slow cooker: Scoop beef mixture into a 6-quart slow cooker.
  3. Add canned goods: Pour in diced tomatoes (with juice), tomato sauce, drained black beans, drained pinto beans, and drained corn. Stir to combine.
  4. Pour in broth: Add beef broth and stir. Liquid should come about three-quarters up the solids; add another 1/2 cup broth if too thick.
  5. Season: Sprinkle taco seasoning and ranch seasoning over top. Stir thoroughly until dissolved. Taste broth—it should be slightly too salty and spicy at this stage.
  6. Cook: Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until flavors meld and broth is rich and fragrant. LOW for 8 hours is preferred.
  7. Adjust seasoning: Before serving, taste and adjust with salt, cayenne, or lime juice as needed.
  8. Serve: Ladle into bowls and let everyone customize with desired toppings.

Notes

For best texture, drain and rinse canned beans even if labeled ‘no salt added.’ Use low-sodium broth and no-salt-added tomatoes to control salt. Soup tastes even better the next day. To thicken, mash some beans against the pot or stir in 1 tablespoon cornstarch mixed with cold water during last 30 minutes. Freezes well for up to 3 months.
