Ingredients

  • Brie cheese, 8 ounces, at room temperature
  • Aged cheddar, 6 ounces, sharp and crumbly
  • Aged gouda, 6 ounces, firm and nutty
  • Goat cheese log, 4 ounces, soft and tangy
  • Fresh figs, 6-8, halved
  • Honeycrisp apples, 2 medium, sliced thin
  • Red seedless grapes, 1 cup, washed and left on small stems
  • Pomegranate seeds, ½ cup
  • Dried apricots, ½ cup
  • Sopressata salami, 4 ounces, thinly sliced
  • Prosciutto, 4 ounces, thinly sliced
  • Marinated olives, ½ cup
  • Cornichons, ¼ cup
  • Candied pecans, ½ cup
  • Honey, 2-3 tablespoons, for drizzling
  • Fresh rosemary sprigs, for garnish (optional)
  • Crusty baguette, 1 medium, sliced into thin rounds
  • Water crackers, 1 cup (plain or rosemary-infused)
  • Fig jam or honeycomb, ¼ cup, for spreading

Instructions

  1. Prep your cheeses (5 minutes): Take all cheeses out of the refrigerator 30 minutes before serving. Unwrap and place on a clean plate. Leave brie whole; cut cheddar and gouda into thin wedges or cubes. Score goat cheese log lightly with a knife.
  2. Prep your fruits (10 minutes): Rinse figs and grapes gently, pat dry. Halve figs lengthwise. Slice apples into thin rounds (about ¼ inch thick) and toss with lemon juice to prevent browning. Remove pomegranate seeds (or rinse pre-seeded ones). Arrange dried apricots in a small pile.
  3. Prep your meats (5 minutes): Unfold prosciutto slices and drape loosely. Fold sopressata slices into quarters or roll into small cylinders.
  4. Arrange the board (15 minutes): Place small bowls or ramekins on the board—fill one with honey, one with fig jam or honeycomb, and one with marinated olives. Space cheeses around the board, placing brie near honey and aged cheddar near apples. Nestle prosciutto and sopressata near cheeses in clusters.
  5. Fill in with fruits and crunch (10 minutes): Scatter fig halves, apple slices, grapes, and pomegranate seeds in empty spaces. Add candied pecans and cornichons in small piles. Tuck fresh rosemary sprigs for color.
  6. Add the accompaniments (5 minutes): Arrange baguette slices and water crackers around the edges, fanning them out slightly.
  7. Final touches (2 minutes): Drizzle brie with honey and sprinkle pomegranate seeds on top. Fill any gaps with extra grapes or crackers. Serve immediately or cover loosely with plastic wrap and refrigerate for up to 2 hours. If refrigerated, let sit at room temperature for 15 minutes before serving.

Notes

Let cheeses come to room temperature for 30 minutes before serving for best flavor. Toss apple slices with lemon juice to prevent browning. For a dairy-free version, substitute brie with cashew-based soft cheese and cheddar with plant-based aged alternative. The board can be prepped up to 24 hours in advance (store components separately) and assembled no more than 2 hours before serving.
