  • 2 medium Honeycrisp apples
  • 2 medium Anjou pears
  • 1 cup Dried figs (mission figs, soft and plump)
  • 1 cup Seedless red grapes
  • 1/2 cup Candied pecans
  • 1/2 cup Marcona almonds (roasted and salted)
  • 1 box Croccantini crackers (e.g., Raincoast Crisps)
  • 1 small baguette (sliced and toasted)
  • 1/2 cup Fig jam
  • Honey (for drizzling)
  • 1/2 cup Cornichons
  • 1/2 cup Mixed olives (e.g., Castelvetrano)
  • Fresh rosemary sprigs (for garnish)
  • 1/4 cup Pomegranate seeds
  • Fresh thyme sprigs (for garnish)

Instructions

  1. Prep your cheeses (5 minutes): Take the brie, cheddar, and goat cheese out of the refrigerator 30 minutes before serving. Slice the aged cheddar into thin triangles or small cubes. Leave the brie whole. Slice the goat cheese log into 1/2-inch rounds.
  2. Prep the fruits (10 minutes): Wash and dry the apples, pears, and grapes thoroughly. Core the apples and slice into thin wedges (about 8 slices per apple). Do the same with the pears. Toss apple and pear slices with a little lemon juice to prevent browning. Cut grapes into small clusters of 3-4 grapes each.
  3. Toast the baguette (8 minutes): Slice the baguette into 1/4-inch rounds. Arrange on a baking sheet, brush lightly with olive oil, and toast at 375°F for 5-7 minutes until golden brown around the edges.
  4. Arrange the cheeses (3 minutes): Place the brie wheel in the center-left of the board. Put aged cheddar pieces in a small pile to the right. Arrange goat cheese rounds in a line or small cluster near the top.
  5. Add the meats (4 minutes): Fold prosciutto slices into loose ribbons or waves and place near the brie. Arrange salami and soppressata slices in overlapping rows or small piles, fanning them out.
  6. Fill in with fruits (5 minutes): Place apple and pear slices in small clusters around the board. Add dried figs between cheese and meat piles. Tuck grape clusters into empty spaces.
  7. Add the crunchy elements (3 minutes): Sprinkle candied pecans and Marcona almonds in small piles around the board. Arrange crackers and toasted baguette slices in rows or fans along the edges.
  8. Place the bowls and garnishes (4 minutes): Set small bowls or ramekins on the board for fig jam, honey, cornichons, and olives. Scatter fresh rosemary sprigs and pomegranate seeds around the board. Finish with fresh thyme sprigs.
  9. Final check (2 minutes): Step back and look at the board. Fill any empty spots with extra crackers or fruit. Drizzle a little honey over the goat cheese rounds. Ensure everything is accessible.

For best flavor, let cheeses come to room temperature before serving. Warm brie in a 350°F oven for 5-7 minutes for extra creaminess. Slice apples and pears right before serving to prevent browning.
