Cozy Halloween Charcuterie Board with Candy Corn Cheese

  • 4 ounces cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • Orange gel food coloring
  • Yellow gel food coloring
  • White gel food coloring (or leave one layer uncolored)
  • 1/2 cup candy corn
  • 1/2 cup roasted, salted almonds
  • 1/2 cup pecans, toasted
  • 1 large apple (Honeycrisp or Granny Smith), sliced
  • 1 large pear (Bosc or Bartlett), sliced
  • 1/2 cup dried cranberries
  • 1/2 cup dark chocolate chips or chunks
  • 8 ounces assorted crackers
  • 4 ounces goat cheese log (optional)
  • Fresh rosemary sprigs (for garnish)
  • Dried orange slices (for garnish)

Instructions

  1. Grate the sharp cheddar cheese using the large holes of a box grater. In a medium bowl, combine the shredded cheddar with softened cream cheese, softened butter, powdered sugar, and vanilla extract. Mix until a thick, cohesive paste forms.
  2. Divide the cheese mixture into three equal portions. Leave one portion plain (white layer). Add yellow gel food coloring to the second portion and mix until evenly distributed. Add orange gel food coloring to the third portion and mix until bright orange.
  3. Lay a large piece of plastic wrap on your work surface. Spread the orange cheese mixture into a rectangle about 6 inches long and 3 inches wide. Place the yellow mixture on top, spreading gently. Finally, spread the white mixture on top to form three layers.
  4. Using the plastic wrap, carefully lift the long edge and roll the rectangle into a log, like a sushi roll. Gently squeeze and shape into a cylinder about 2 inches in diameter. Twist the ends of the plastic wrap to seal. Refrigerate for at least 2 hours or up to overnight.
  5. About 15 minutes before serving, remove the cheese log from the fridge to soften slightly. Arrange the board: place the cheese log in the center, add goat cheese (if using), then fill in with bowls or piles of candy corn, almonds, pecans, dried cranberries, and dark chocolate chips. Arrange apple and pear slices in fan patterns. Fill gaps with crackers.
  6. Slice the candy corn cheese log into rounds about 1/2-inch thick using a serrated knife. Arrange slices on the board, overlapping slightly. Garnish with fresh rosemary sprigs and dried orange slices. Serve immediately.

Notes

For best results, ensure cream cheese and butter are fully softened to avoid lumps. If the cheese log cracks when slicing, let it sit at room temperature a few more minutes. Use a serrated knife for clean slices. The cheese log can be made up to 3 days in advance.
