Ingredients

Scale
  • 1 cup (150g) raw almonds
  • 1 cup (130g) raw cashews
  • 1 cup (110g) raw pecans
  • 1/2 cup (60g) raw walnuts
  • 1 cup (140g) dried cranberries
  • 1/2 cup (80g) dried cherries (optional)
  • 1/2 cup (80g) golden raisins
  • 2 tablespoons (30ml) coconut oil
  • 2 tablespoons (30ml) pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon sea salt
  • 1/2 cup (90g) dark chocolate chips (optional)
  • 1/2 cup (40g) unsweetened coconut flakes (optional)
  • 1/4 cup (35g) pumpkin seeds (optional)

Instructions

  1. Preheat your oven to 325°F (165°C). Line a large baking sheet with parchment paper.
  2. Combine all the nuts (almonds, cashews, pecans, and walnuts) in a large mixing bowl. Toss to mix.
  3. In a small saucepan over low heat, combine the coconut oil and maple syrup. Warm gently, stirring constantly, until the coconut oil melts completely (about 2 minutes). Do not let it boil.
  4. Whisk in the cinnamon, ginger, nutmeg, and salt until fully dissolved.
  5. Pour the warm coating over the nuts. Use a silicone spatula to scrape every drop. Stir with a wooden spoon until every nut is coated (about 2 minutes).
  6. Spread the nuts in a single layer on the prepared baking sheet. Use a spatula to spread them evenly. Avoid piling them up.
  7. Bake for 12-15 minutes, stirring halfway through (at 7 minutes). The nuts should be fragrant and slightly darker when done.
  8. Let the nuts cool completely on the baking sheet (about 20-30 minutes). Do not add dried fruit while warm.
  9. Once cooled, transfer the nuts to a large bowl. Add the dried cranberries, dried cherries, golden raisins, and any optional add-ins (chocolate chips, coconut flakes, pumpkin seeds). Toss gently to combine.
  10. Transfer to an airtight container. Store at room temperature for up to two weeks.

Notes

Don’t skip the halfway stir to ensure even toasting. Cool completely before storing to maintain crunch. For a nut-free version, use roasted chickpeas and pumpkin seeds. The mix tastes even better after a day or two as flavors meld.
