This baked brie is a show-stopping appetizer that looks like you spent hours on it, but comes together in just about 20 minutes. Creamy, melted brie is topped with a tart-sweet cranberry compote and crunchy candied pecans for the perfect holiday bite.

Ingredients

Scale
  • 1 (8-ounce) wheel of Brie cheese
  • 1 cup fresh or frozen cranberries
  • 1/4 cup pure maple syrup
  • 1 tablespoon orange juice
  • 1 teaspoon vanilla extract
  • 1 cup pecan halves
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • For serving: crusty baguette slices, crackers, apple slices, or pear slices

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Make the candied pecans: In a small saucepan over medium heat, melt the 2 tablespoons of unsalted butter. Add the 1 cup of pecan halves, 2 tablespoons of brown sugar, and 1/4 teaspoon of cinnamon. Stir constantly for 3-4 minutes, until the sugar is melted and the pecans are fragrant and coated. Spread them out in a single layer on a parchment-lined baking sheet. Let them cool completely.
  3. Prepare the cranberry topping: In a small bowl, combine the 1 cup of cranberries, 1/4 cup of maple syrup, 1 tablespoon of orange juice, and 1 teaspoon of vanilla extract. Stir to combine.
  4. Prepare the brie: Place the wheel of brie in a small baking dish. Using a sharp knife, score a shallow crosshatch pattern on the top rind of the brie.
  5. Assemble and bake: Spoon the cranberry mixture over the top of the scored brie, letting some of the berries and syrup cascade down the sides. Bake for 15-20 minutes, or until the brie is soft and puffed up, and the cranberries have started to burst and get jammy.
  6. Add the pecans and serve: Carefully remove the brie from the oven. Let it rest for 2-3 minutes. Then, sprinkle the cooled candied pecans over the top. Serve immediately with your chosen dippers.

Notes

Don’t overbake the brie; it should be jiggly in the center. Let the brie sit at room temperature for 15-20 minutes before baking for more even melting. Watch the pecans carefully as the sugar can burn quickly. The candied pecans can be made up to a week in advance and stored in an airtight container. Use a serrated knife to serve for cleaner cuts.
