A velvety, aromatic eggnog made with bourbon and fresh nutmeg, perfect for cozy holiday nights. This recipe uses a simple tempering technique for a silky smooth texture that beats store-bought versions.

Ingredients

Scale
  • 6 large eggs, separated
  • 3/4 cup granulated sugar, divided
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 to 1 1/2 cups bourbon (to taste)
  • 1 teaspoon freshly grated nutmeg (plus more for garnish)
  • 1 teaspoon vanilla extract
  • a pinch of salt

Instructions

  1. Separate the eggs, placing yolks in one large bowl and whites in another.
  2. Add half the sugar (about 6 tablespoons) to the egg yolks. Whisk vigorously until pale yellow and thick, about 3-4 minutes.
  3. Slowly pour in the milk, heavy cream, bourbon, vanilla extract, and a pinch of salt. Whisk gently until well combined.
  4. Grate about 1 teaspoon of fresh nutmeg directly into the mixture and stir.
  5. Using an electric mixer or whisk, beat the egg whites with the remaining sugar until soft peaks form, about 3-4 minutes.
  6. Gently fold the whipped egg whites into the yolk mixture using a spatula until just combined.
  7. Pour the eggnog through a fine-mesh strainer into a serving pitcher or storage container.
  8. Cover and refrigerate for at least 2 hours, preferably overnight.
  9. Serve in glasses, topped with a generous grating of fresh nutmeg.

Notes

For best results, use room temperature eggs and dairy. Fresh nutmeg is essential. The eggnog improves after 24-48 hours in the fridge. For a cooked version, gently heat the milk and cream before adding to yolks to temper the eggs.
