This cozy hot buttered rum with cinnamon is a rich, buttery, deeply spiced cocktail that warms you from the inside out. Perfect for holiday gatherings and dinner parties, it’s the drink that makes people stop mid-conversation and ask for the recipe.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed dark brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons (about 1 oz) spiced or dark rum per serving
  • 1 heaping tablespoon prepared batter per serving
  • 6–8 ounces boiling water per serving
  • Optional: Cinnamon stick and star anise for garnish

Instructions

  1. Make the Batter (15 minutes): In a medium mixing bowl, combine the softened unsalted butter, dark brown sugar, and granulated sugar. Beat with a hand mixer on medium speed until light and fluffy—about 3-4 minutes. Scrape down the sides of the bowl with your spatula halfway through.
  2. Add the Spices: Add the ground cinnamon, ground nutmeg, ground cloves, salt, and vanilla extract to the butter mixture. Beat on low speed until everything is fully incorporated, about 1 minute. Stop and scrape the bowl again.
  3. Chill the Batter (Optional but Recommended): Transfer the batter to an airtight container or a small glass jar. You can use it immediately, but letting it chill in the fridge for at least 30 minutes allows the flavors to meld together beautifully. The batter keeps in the fridge for up to two weeks.
  4. Assemble the Drink (2 minutes per serving): When you’re ready to serve, bring a kettle or saucepan of water to a full rolling boil. While the water is heating, place 1 heaping tablespoon of the batter into your mug. Add 2 ounces of dark or spiced rum.
  5. Add the Water: Pour 6-8 ounces of the boiling water directly over the batter and rum. Stir vigorously with a spoon until the batter is fully dissolved and the drink is smooth and creamy.
  6. Garnish and Serve: Garnish with a cinnamon stick and a star anise if desired. Serve immediately, while it’s piping hot.

Notes

For the best texture, make sure your butter is truly softened—leave it out on the counter for at least an hour. Use boiling water to properly melt and emulsify the batter. The batter can be stored in the refrigerator for up to two weeks or frozen for up to three months. For a dairy-free version, substitute with high-quality plant-based butter.
