Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 2 cups (240g) all-purpose flour
  • 1/4 cup (25g) almond flour
  • 1/4 teaspoon salt
  • 1 1/2 cups (180g) powdered sugar
  • 2–3 tablespoons milk
  • 1/4 teaspoon almond extract (for icing)
  • 1/4 teaspoon vanilla extract (for icing)
  • Sprinkles (optional)
  • Crushed almonds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter and granulated sugar together on medium speed until light and fluffy, about 3 to 4 minutes. Scrape down the sides of the bowl halfway through.
  3. Beat in the egg, almond extract, and vanilla extract until fully combined.
  4. In a separate bowl, whisk together the all-purpose flour, almond flour, and salt.
  5. Gradually add the dry ingredients to the wet mixture in two additions, mixing on low speed after each until just combined. Do not overmix.
  6. Fit your cookie press with the disc of your choice. Fill the press with the dough.
  7. Hold the press perpendicular to the baking sheet, press down firmly, and lift straight up. Space the cookies about 2 inches apart. If the dough sticks, chill it for 10 minutes in the fridge.
  8. Bake for 8 to 10 minutes, until the edges are lightly golden but the tops are still pale. Let the cookies sit on the baking sheet for 2 minutes, then transfer to a cooling rack to cool completely.
  9. In a small bowl, whisk together the powdered sugar, 2 tablespoons of milk, almond extract, and vanilla extract. Add more milk, 1 teaspoon at a time, until the icing is thick but pourable (like honey).
  10. Transfer the icing to a piping bag or a zip-top bag with a tiny corner snipped off. Drizzle the icing over the cooled cookies in a back-and-forth motion. Add sprinkles or crushed almonds immediately if desired.
  11. Let the icing set at room temperature for about 30 minutes until firm.

Notes

For best results, use room temperature butter and egg. If dough is too soft, chill for 15 minutes before pressing. Bake one sheet at a time for even browning. The almond flavor deepens after a day or two. Store in an airtight container at room temperature for up to 5 days. Freeze un-iced cookies for up to 3 months.
