Ingredients

Scale
  • 6 bone-in, skin-on chicken thighs (about 2 pounds total)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 4 tablespoons unsalted butter, divided
  • 6 cloves garlic, minced
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup heavy cream
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • Flaky sea salt, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels.
  3. In a small bowl, mix together the salt, pepper, paprika, and garlic powder. Sprinkle this mixture evenly over both sides of the chicken thighs, rubbing it in gently. Let them sit at room temperature for about 10 minutes.
  4. Heat a large oven-safe skillet over medium-high heat. Add 1 tablespoon of the butter and let it melt until sizzling but not browning.
  5. Place the chicken thighs in the skillet, skin-side down, and cook undisturbed for 5-7 minutes until the skin is golden brown and releases easily.
  6. Flip the chicken and cook for another 3-4 minutes until golden brown. Remove the chicken to a plate and set aside.
  7. Reduce the heat to medium-low. Add the remaining 3 tablespoons of butter to the skillet. Once melted, add the minced garlic and cook for about 30 seconds, stirring constantly, until fragrant.
  8. Pour in the chicken broth, scraping up the browned bits from the bottom of the pan. Stir in the heavy cream, lemon juice, dried thyme, and red pepper flakes (if using). Let the sauce simmer for about 2 minutes until slightly thickened.
  9. Return the chicken to the skillet, skin-side up, nestling them into the sauce. Spoon some sauce over the tops.
  10. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  11. Remove from the oven and let rest for 5 minutes. Sprinkle with fresh parsley and flaky sea salt before serving.

Notes

Pat chicken thighs completely dry for crispy skin. Watch garlic carefully to avoid burning. Let chicken come to room temperature before cooking for even doneness. Make extra sauce for serving with bread or rice.
