  • 2 tablespoons (32g) creamy peanut butter (natural or regular)
  • 1 tablespoon (15ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional but recommended)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: sliced banana, extra peanut butter drizzle, chopped peanuts, cinnamon, dark chocolate chips

Instructions

  1. Mash the banana: Peel the banana and place it in a mason jar or small bowl. Use a fork to mash it thoroughly until mostly smooth with a few tiny lumps. (If banana is firm, microwave for 10 seconds to soften.)
  2. Add wet ingredients: To the mashed banana, add milk, Greek yogurt, peanut butter, maple syrup, and vanilla extract. Stir with a fork until the peanut butter is fully incorporated and the mixture is smooth and uniform.
  3. Mix in dry ingredients: Add rolled oats, chia seeds, and a pinch of salt. Stir well until everything is evenly distributed and oats are fully submerged. If too thick, add a splash more milk.
  4. Seal and refrigerate: Put the lid on the jar and shake gently. Refrigerate for at least 6 hours, ideally 8–12 hours (overnight).
  5. Add toppings in the morning: Stir the oats. If too thick, add 1–2 tablespoons of milk. Add desired toppings (sliced banana, peanut butter drizzle, cinnamon, etc.). Serve cold or microwave for 30–45 seconds for warm oats.

Notes

Mash the banana thoroughly for best texture. Use rolled oats, not quick or steel-cut. Chia seeds add thickness and nutrition. Make multiple jars on Sunday for grab-and-go breakfasts up to 4 days. Leave toppings off until serving. For warm oats, microwave 30–45 seconds with a splash of milk.
