pecan pie cobbler - featured image

This warm, gooey, almost fudge-like cobbler tastes exactly like a pecan pie but with a soft, cakey top that soaks up all that buttery syrup. It’s the ultimate comfort dessert for cozy nights, made with simple ingredients and ready in under 15 minutes of prep.

Ingredients

Scale
  • 1 cup (120g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup (120ml) milk (whole milk preferred)
  • ¼ cup (57g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1½ cups (170g) pecans, roughly chopped
  • 1 cup (200g) brown sugar, packed
  • ½ cup (113g) unsalted butter, melted
  • ½ cup (170g) light corn syrup
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Vanilla ice cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish with butter or non-stick spray.
  2. In a medium mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt. Add the milk, melted butter, and vanilla extract. Stir until just combined (a few small lumps are okay). Spread the batter evenly into the prepared baking dish.
  3. In a large bowl, whisk together the brown sugar, melted butter, corn syrup, eggs, vanilla extract, and a pinch of salt until smooth. Fold in the chopped pecans. Pour this mixture directly over the batter in the baking dish. Do not stir.
  4. Bake for 40 to 45 minutes, until the top is golden brown and the edges are bubbly. A toothpick inserted into the center should come out with a few moist crumbs. Let cool on a wire rack for at least 15 minutes before serving.
  5. Scoop the warm cobbler into bowls and top with a generous scoop of vanilla ice cream. Serve immediately.

Notes

Don’t rush the cooling time—let the cobbler rest for at least 15 minutes so the syrup thickens. Toast the pecans first for deeper flavor. Use room temperature eggs for a smoother topping. If edges brown too fast, tent with foil after 30 minutes. Stick to a single batch in the right-sized dish for best results.
