This easy pumpkin spice cold foam iced coffee is a quick, balanced, and cozy fall drink made with real pumpkin puree and simple ingredients. It comes together in under five minutes without any fancy equipment.

  • 1 cup (240 ml) strong brewed coffee or espresso
  • 1/4 cup (60 ml) milk of choice (whole milk, oat milk, or 2%)
  • 1 cup ice cubes
  • 1/4 cup (60 ml) heavy cream or heavy whipping cream, cold
  • 1 tablespoon (15 ml) pumpkin puree (100% pure, not pie filling)
  • 1 to 2 teaspoons (5 to 10 ml) maple syrup
  • 1/4 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Brew 1 cup of strong coffee or espresso and let it cool slightly (or use cold brew concentrate).
  2. Fill a serving glass with about 1 cup of ice cubes.
  3. Pour 1/4 cup of milk over the ice.
  4. Slowly pour the cooled coffee over the ice and milk.
  5. In a small bowl or jar, combine 1/4 cup cold heavy cream, 1 tablespoon pumpkin puree, 1 to 2 teaspoons maple syrup, 1/4 teaspoon pumpkin pie spice, 1/4 teaspoon vanilla extract, and a pinch of salt. Whisk vigorously by hand for about 2 minutes, or until the mixture thickens and forms soft peaks.
  6. Using a spoon, gently dollop the cold foam over the back of the spoon onto the top of the iced coffee.
  7. Dust a tiny pinch of pumpkin pie spice or cinnamon over the top of the foam.
  8. Serve immediately and enjoy.

Notes

Keep the cream cold for best foam. Don’t oversweeten; start with 1 teaspoon maple syrup. Whisk until soft peaks form—over-whisking turns it into butter. Layer foam gently using the back of a spoon to prevent sinking.
