Instructions

  1. Preheat oven to 350°F (175°C).
  2. Peel, core, and slice apples into 1/4-inch thick slices. Toss with granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract in a large bowl. Let sit while making topping.
  3. In a medium bowl, combine oats, flour, brown sugar, cinnamon, and salt. Pour in melted butter and vanilla, stir until moistened and clumps form (like wet sand).
  4. Pour apple mixture into greased 9×13 baking dish. Dot with 1/4 cup butter pieces. Sprinkle oat crumble evenly over top.
  5. Place dish on a baking sheet. Bake at 350°F for 40-45 minutes, until filling is bubbly and topping is golden brown. Tent with foil if browning too fast.
  6. While crisp bakes, make caramel: In a small saucepan over medium heat, melt 1/4 cup butter. Add brown sugar and heavy cream, whisk constantly until smooth. Bring to a gentle simmer and cook 2-3 minutes. Remove from heat, stir in vanilla and flaky sea salt. Let cool slightly.
