  • 6 medium apples (about 2 pounds or 900g), peeled, cored, and sliced ¼-inch thick (mix of Granny Smith and Honeycrisp recommended)
  • ¼ cup (50g) granulated sugar
  • 1 tablespoon (8g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon (15ml) lemon juice
  • ½ cup (120ml) salted caramel sauce (store-bought, e.g., Stonewall Kitchen or Trader Joe’s)
  • 1 cup (90g) old-fashioned rolled oats
  • ¾ cup (95g) all-purpose flour
  • ½ cup (100g) packed light brown sugar
  • ¼ cup (50g) granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (113g or 1 stick) cold unsalted butter, cut into small cubes
  • 2 tablespoons (30ml) additional salted caramel sauce for drizzling after baking
  • Flaky sea salt (like Maldon) for sprinkling
  • Vanilla ice cream or whipped cream for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven.
  2. Peel, core, and slice the apples into ¼-inch thick slices. You should end up with about 6 cups of sliced apples.
  3. In a large mixing bowl, combine the sliced apples with the granulated sugar, 1 tablespoon flour, cinnamon, nutmeg, and lemon juice. Toss until every slice is coated. Let sit for 5 minutes.
  4. In a medium bowl, whisk together the oats, ¾ cup flour, brown sugar, granulated sugar, cinnamon, and salt. Add the cold butter cubes. Use a pastry cutter or your fingertips to work the butter into the dry ingredients until the mixture looks like coarse meal with some pea-sized butter pieces remaining.
  5. Pour the ½ cup salted caramel sauce over the apple mixture and stir gently until well combined.
  6. Transfer the apple-caramel mixture to an 8×8-inch baking dish and spread into an even layer. Sprinkle the oat crumble topping evenly over the apples, covering them completely. Do not press the topping down.
  7. Place the dish on a baking sheet. Bake for 40-45 minutes, until the topping is golden brown and the filling is bubbling around the edges. If the topping is browning too quickly after 30 minutes, tent loosely with foil.
  8. Let the crisp cool on a wire rack for at least 15 minutes.
  9. Just before serving, drizzle with the remaining 2 tablespoons of caramel sauce and sprinkle with flaky sea salt.
  10. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

Keep the butter cold for a crumbly topping. Don’t overmix the apples. Let the crisp rest for 15 minutes after baking to allow the filling to set. For extra topping, make 1.5 times the topping recipe. Store leftovers covered in the refrigerator for up to 4 days. Reheat in a 350°F oven for 10-15 minutes to restore crispness.
