This cozy salted caramel pecan pie cobbler is a quick and easy dessert that combines gooey caramel, buttery biscuit-like topping, and toasted pecans. Perfect for last-minute gatherings or cozy nights, it delivers warm, soul-soothing comfort in every bite.

Ingredients

Scale
  • 1 cup all-purpose flour (spooned and leveled)
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk (room temperature)
  • 1/2 cup unsalted butter (melted and slightly cooled)
  • 1 teaspoon vanilla extract (pure)
  • 1 cup chopped pecans (toasted)
  • 1 cup caramel sauce (store-bought or homemade)
  • 1/2 teaspoon flaky sea salt (e.g., Maldon)
  • 1/4 cup brown sugar (packed)

Instructions

  1. Preheat your oven to 350°F (175°C). Place your 8×8-inch baking dish on a baking sheet to catch any caramel overflow.
  2. Toast the pecans: In a small skillet over medium heat, stir the chopped pecans constantly for 3-4 minutes until fragrant and slightly darker. Set aside to cool.
  3. Make the batter: In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt. Make a well in the center and pour in the milk, melted butter, and vanilla extract. Stir until just combined (a few lumps are fine).
  4. Assemble the cobbler: Pour the batter into the prepared baking dish. Sprinkle the toasted pecans evenly over the top. Drizzle the caramel sauce over the pecans in a zigzag pattern. Sprinkle the brown sugar over everything, then finish with a generous pinch of flaky sea salt.
  5. Bake for 30-35 minutes, until the edges are golden brown and the center is set but still slightly jiggly. A toothpick inserted into the batter (not the caramel) should come out clean.
  6. Cool slightly on a cooling rack for at least 10 minutes to allow the caramel to thicken.
  7. Serve warm, spooned into bowls. Optionally top with vanilla ice cream or a drizzle of heavy cream.

Notes

Don’t overmix the batter; lumps are fine. Toast pecans for best flavor. Use a baking sheet to catch caramel overflow. Let cobbler rest 10 minutes before serving. For a less salty version, use unsalted butter in the batter and adjust flaky salt to taste. Cobbler tastes even better the next day.
