  • 3 large eggs

  • 1/2 teaspoon salt
  • 1 box (15.25 ounces) yellow cake mix
  • 1 cup chopped pecans
  • 1/2 cup packed light brown sugar
  • 3/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Toast the pecans: In a small dry skillet over medium heat, add the chopped pecans. Stir constantly for 3-4 minutes until fragrant and slightly darker. Pour onto a plate to cool.
  3. Make the pumpkin base: In a large mixing bowl, whisk together the pumpkin puree, evaporated milk, eggs, granulated sugar, vanilla extract, pumpkin pie spice, cinnamon, and salt until smooth and well combined.
  4. Pour the pumpkin mixture into the prepared dish and spread evenly with a spatula.
  5. Create the streusel layer: In a separate small bowl, combine the dry cake mix, toasted pecans, and brown sugar. Stir with a fork to distribute evenly. Sprinkle this mixture evenly over the pumpkin layer. Do not stir.
  6. Drizzle with melted butter: Slowly pour the melted butter over the top of the cake mix mixture, distributing as evenly as possible.
  7. Bake for 40-45 minutes, until the top is golden brown and the edges are bubbling. The center should be set but slightly jiggly. If browning too quickly after 30 minutes, tent loosely with foil.
  8. Cool on a wire rack for at least 20 minutes before serving. Serve warm or at room temperature.
