A creamy, spicy buffalo chicken dip topped with a sour cream spider web pattern. Perfect for Halloween parties, game days, or any gathering where you want a crowd-pleasing appetizer that looks impressive but comes together in just 35 minutes.

Ingredients

Scale
  • 2 cups cooked shredded chicken (about 2 large breasts or 1 rotisserie chicken)
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo hot sauce (preferably Frank’s RedHot)
  • 1/2 cup ranch dressing
  • 1/2 cup sour cream, divided
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 cup shredded mozzarella
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder (optional)
  • Salt and black pepper to taste
  • Optional: 1/4 cup crumbled blue cheese
  • For serving: tortilla chips, celery sticks, carrot sticks, or crusty bread

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the middle of the oven.
  2. Shred your chicken. If using rotisserie chicken, pull the meat off the bones and shred with two forks. If cooking chicken breasts from scratch, boil them for 15-20 minutes until cooked through, then shred.
  3. Soften the cream cheese. If you forgot to take it out earlier, microwave it for 15-20 seconds until soft but not melted.
  4. In a mixing bowl, combine the softened cream cheese, buffalo hot sauce, ranch dressing, and 1/4 cup of the sour cream (save the rest for the web). Stir until smooth and well combined.
  5. Fold in the shredded chicken, smoked paprika, garlic powder, and a pinch of black pepper. Mix until every piece of chicken is coated. Taste and adjust salt if needed.
  6. Add 1 cup of the shredded cheddar and all of the mozzarella. Stir until evenly distributed.
  7. Transfer the mixture to a 9×9 baking dish or 10-inch oven-safe skillet. Spread evenly and smooth the top with a spatula.
  8. Sprinkle the remaining 1/2 cup of cheddar evenly over the top.
  9. Bake for 15 minutes, until bubbly and hot all the way through. The edges should be bubbling and the cheese on top melted and starting to brown slightly.
  10. While the dip bakes, prepare the sour cream web. Put the remaining 1/4 cup of sour cream in a small piping bag or zip-top bag. Snip off a tiny corner.
  11. Remove dip from oven and let it cool for 2 minutes.
  12. Pipe the web design: Starting from the center, pipe a small circle of sour cream. Then pipe concentric circles around it, spaced about an inch apart. Take a toothpick or knife tip and drag it from the center outward through all the circles, like drawing spokes on a wheel. Repeat every inch or so around the dip.
  13. Optional: For a spider, place a pitted black olive cut in half in the center—one half for the body, sliced strips for legs.
  14. Serve immediately with chips, celery, carrots, or bread.

Notes

Don’t overbake—15 minutes at 375°F is usually perfect. Room temperature cream cheese is non-negotiable to avoid lumps. The web pattern is easier than it looks; keep sour cream thick and wipe the toothpick clean between each line. Shred your own cheese for best melting. Can be assembled ahead (minus web) and refrigerated up to 24 hours; add 5-7 minutes to baking time if starting cold.
