Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup champagne or sparkling wine, room temperature
  • ¼ cup whole milk, room temperature
  • 1 cup unsalted butter, softened (for frosting)
  • 3 ½ cups powdered sugar, sifted
  • ½ cup fresh strawberry puree (about 6–7 strawberries, blended and strained)
  • 1 teaspoon vanilla extract (for frosting)
  • Pinch of salt
  • 1–2 tablespoons champagne (optional, for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, beating well after each. Mix in vanilla extract.
  5. With mixer on low, add half the dry ingredients until just combined. Add champagne and milk, mixing gently. Add remaining dry ingredients, mixing until just combined. Do not overmix.
  6. Divide batter evenly among liners, filling each about ⅔ full.
  7. Bake for 18-22 minutes, until a toothpick inserted in center comes out clean. Cool in pan 5 minutes, then transfer to wire rack to cool completely.
  8. For strawberry puree: blend strawberries until smooth, strain through fine-mesh sieve. Set aside.
  9. For buttercream: beat softened butter until creamy, about 2 minutes. Gradually add powdered sugar, then strawberry puree, vanilla, and salt. Beat on medium-high 3-4 minutes until fluffy. Add extra champagne if desired.
  10. Pipe or spread buttercream onto cooled cupcakes. Garnish with fresh strawberry slice or edible glitter if desired.

Notes

Room temperature ingredients are crucial for proper texture. Don’t overmix the batter. Strain strawberry puree to remove seeds. Cupcakes taste even better the next day. For non-alcoholic version, substitute champagne with sparkling apple cider or ginger ale.
