This creamy peanut butter banana overnight oats recipe is the breakfast solution you need. Five minutes of prep, a night in the fridge, and you’ve got a breakfast that tastes like a treat but fuels you like a champion.

Ingredients

Scale
  • 1/2 cup (50g) rolled oats
  • 1/2 cup (120ml) milk (any kind)
  • 1/4 cup (60g) Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter
  • 1 medium ripe banana, mashed
  • 1 tablespoon (12g) chia seeds (optional)
  • 1 tablespoon (15ml) maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a small bowl, mash the ripe banana with a fork until mostly smooth with a few tiny lumps.
  2. In a jar or container, combine the mashed banana, milk, Greek yogurt, peanut butter, maple syrup, and vanilla extract. Stir until the peanut butter is fully incorporated.
  3. Add the rolled oats, chia seeds (if using), and a pinch of salt. Stir until the oats are fully coated.
  4. Seal the jar and refrigerate for at least 6 hours, preferably 8-12 hours overnight.
  5. In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, extra peanut butter, chopped peanuts, or cinnamon. Serve cold or microwave for 30-45 seconds if desired.

Notes

For best texture, use rolled oats (not quick or steel-cut). The banana should be very ripe with brown spots. Chia seeds are optional but help thicken the oats. Make multiple jars at once for grab-and-go breakfasts throughout the week. These oats taste even better on day 2 or 3.
