Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1.5 pounds boneless, skinless chicken breasts (about 3 medium)
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • 4 cups low-sodium chicken broth
  • 2 cans (4 ounces each) diced green chiles
  • 2 cups frozen corn (about 10 ounces)
  • 8 ounces cream cheese, softened and cut into cubes
  • ½ cup heavy cream
  • 2 tablespoons fresh lime juice
  • ¼ cup chopped fresh cilantro, plus more for garnish

Instructions

  1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add diced onion and cook for 4-5 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant.
  2. Push onions and garlic to the sides of the pot. Place chicken breasts in the center and cook for 2-3 minutes per side until lightly golden.
  3. Sprinkle cumin, oregano, salt, and pepper over the chicken. Stir to coat and cook for 1 minute to toast the spices.
  4. Pour in chicken broth and bring to a gentle boil. Use a wooden spoon to scrape up any browned bits from the bottom of the pot.
  5. Reduce heat to low, cover, and simmer for 15-20 minutes until chicken is cooked through (165°F internal temperature).
  6. Remove chicken from pot and shred with two forks. Return shredded chicken to the pot.
  7. Stir in diced green chiles and frozen corn. Simmer for 5 minutes.
  8. Reduce heat to low. Add softened cream cheese cubes one at a time, stirring gently until fully melted and broth is creamy (about 3-4 minutes).
  9. Stir in heavy cream and fresh lime juice. Taste and adjust salt or spice as needed.
  10. Ladle into bowls and garnish with fresh cilantro and desired toppings.

Notes

Don’t boil the cream cheese; melt over low heat to avoid graininess. Toast spices for deeper flavor. Use room temperature cream cheese for easier melting. Shred chicken while warm. Taste and adjust seasoning as you go. For a thicker chili, simmer uncovered for 10-15 minutes after adding cream cheese.
