Ingredients

Scale
  • 4 bone-in pork chops, about 1 inch thick (5–6 ounces each)
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper, freshly ground
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 teaspoon fresh thyme leaves
  • ¼ teaspoon salt
  • Pinch of red pepper flakes (optional)

Instructions

  1. Remove pork chops from refrigerator 15-20 minutes before cooking to take the chill off.
  2. In a small bowl, combine softened butter, minced garlic, parsley, rosemary, thyme, salt, and red pepper flakes (if using). Mash together with a fork until evenly distributed. Set aside at room temperature.
  3. Pat pork chops dry thoroughly with paper towels on both sides.
  4. Drizzle olive oil over pork chops and rub in evenly. In a small bowl, mix salt, pepper, garlic powder, paprika, and onion powder. Sprinkle seasoning mixture over both sides of each chop, pressing gently to adhere.
  5. Preheat air fryer to 400°F (200°C) for about 3 minutes.
  6. Place seasoned pork chops in air fryer basket in a single layer, without overcrowding.
  7. Air fry at 400°F for 6 minutes without opening the basket.
  8. Flip each pork chop using tongs and cook for another 5-7 minutes, until internal temperature reaches 145°F (63°C) at the thickest part.
  9. Remove pork chops from air fryer and place on a cutting board or plate. Immediately top each with a generous pat of herb butter. Let rest for 5 minutes.
  10. Serve with any extra butter spooned over the top.

Notes

For best results, use pork chops at least 1 inch thick. Do not skip drying the chops thoroughly—moisture prevents crispiness. Let the herb butter soften properly before mixing. An instant-read thermometer ensures perfect doneness. If cooking in batches, keep first batch warm in a 200°F oven. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in air fryer at 350°F for 3-4 minutes.
