Learn how to make perfectly crispy air fryer pumpkin seeds in just 15 minutes with only three ingredients. This easy recipe delivers crunchy, salty seeds every time, perfect for fall snacking.

Ingredients

Scale
  • 1 cup fresh pumpkin seeds
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon flaky sea salt (plus more to taste)

Instructions

  1. Separate the seeds from the pumpkin guts. Scoop out the seeds and stringy pulp into a bowl, then pick out the seeds and place them in a colander.
  2. Rinse the seeds thoroughly under cold water, rubbing them gently to remove any remaining pumpkin strings, until the water runs clear.
  3. Dry the seeds completely by spreading them on a clean kitchen towel or paper towels, patting dry, and letting them air dry for about 5 minutes.
  4. Preheat your air fryer to 350°F (175°C) for about 3 minutes.
  5. Toss the dried seeds in a mixing bowl with 1 tablespoon of oil and 1 teaspoon of flaky sea salt until every seed is coated.
  6. Spread the seasoned seeds in the air fryer basket in a single layer. Do not overcrowd; work in batches if needed.
  7. Air fry at 350°F for 5 minutes.
  8. Shake the basket and cook for another 3-5 minutes, checking at the 3-minute mark. Seeds should be golden brown and sound hollow when shaken.
  9. Let the seeds cool completely for at least 5 minutes (they get crunchier as they cool).
  10. Taste and adjust salt if needed.

Notes

Dry the seeds thoroughly to ensure crispiness. Do not overcrowd the air fryer basket. Watch closely at the end to prevent burning. Let cool completely before storing. For variations, try spicy chili lime, sweet cinnamon, everything bagel, garlic parmesan, or maple rosemary seasonings.
